Moisture retention in confectionery

Sugar has an impact on the water-binding properties of the confectionery

Inverted sugar has exceptionally good water-binding properties.

This fact is utilised in certain confectionery products to prevent them from drying out.

Hard toffee with an excessive content of inverted sugar may get sticky on the outside since its ability to absorb water from the air is enhanced.
