Colour of jam and marmalade

 Sugar has a great impact on the appearance of the product.

Thanks to the sugar, the fruit maintains its colour and structure because of the osmotic pressure.

In e.g. raspberry jam with added sugar the natural structure of the berry is maintained, while it would absorb water if other sweeteners were used.

Sugar also prevents the enzymatic reaction which makes fruit/berries turn brown.
