Sugar beet continue to grow far into the autumn. Since all sugar beet cannot be delivered at the factory at the same time, beet are harvested and delivered continuously from September to the beginning of January. Beet harvesters are carefully adjusted to cut the top accurately and remove soil and stones without damaging the beet.

Beet do not tolerate hard frost and must be harvested before there is a risk of that. So, before they can be delivered at the factory, many of the beet are stored in piles (clamps) on the field protected against frost.
